The secret is sajji
What makes a papad truly Bikaneri is sajji, also called sajji khar or papad khar. It is a natural salt traditionally made from desert plants. Sajji gives the dough its soft, pliable texture so it can be rolled paper-thin. Then, when the papad meets a flame, it puffs up light and crisp. We pair it with premium moong dal, black pepper and hing for the bold, peppery flavour Bikaner is known for.
Handmade, the way it has always been
Every Manniram moong papad is made by hand. The dal is ground fresh and kneaded into a firm dough with sajji and spices. Skilled hands roll each papad into a large, even disc and then dry it carefully until it is ready to pack. There are no shortcuts and no machines rushing the process. Every papad gets the time it needs.
From Bikaner to your table
Roast it on a gas flame, fry it, or microwave it for a minute. Each method gives you the same crisp, golden bite. Serve it with dal-chawal, khichdi or a full thali. In many Indian homes, the meal isn’t complete until the papad arrives.
